S&M Sausage & Meat: San Diego's Newest Meat-ery

For carnivores everywhere, it's hunting season.  And while, if you live in somewhere like the Sierra Nevadas or the whole state of Wyoming, finding and eventually turning into something tasty a great piece of game like antelope or elk can be as simple as walking through one's backyard.  For those of us in the urban jungle where buildings and sidewalks replace trees and meadows, finding great game can be just a tad bit more difficult.

As most cities prohibit the carrying of a rifle in public, foodies everywhere with a craving for the comfort of a piece of elk are forced to either resort to abundantly available bison or search out havens that understand and appreciate our need to eat things with antlers.  San Diego has a few of those havens but all are more the place for which you'd shower, dress up, and prepare for a more formal dinner with a hefty bill at the end.  The newest haven, S&M Sausage and Meat, the brainchild of burger joint Slater's 50/50 Scott Slater, aims to offer an alternative for those looking for a meat adventure without the pretense.

Although being dressed is a requirement and taking a shower before hand is recommended, Sausage & Meat is decidedly more casual, featuring a communal family-style dining arrangement, a system of ordering/delivery that pairs a central order line and follow-up/delivery waitstaff, and an industrial decor creatively utilizing common materials and finishes.  The three elements combined set the stage for S&M's more "out of the box" cuisine.  Staples such as bison and pork cheeks are certain to become local favorites, but those dishes featuring more exotic ingredients like kangaroo and rabbit, as well as specialties like the house made soft pretzel bites are the dishes that tend to become local cult-classics.  And just in case it couldn't get any better, S&M also features America's favorite meat - Bacon.  Here, however, it is served dressed in a number of unique flavors such as honey sriracha, garlic rosemary Parmesan, and white chocolate cashew.
